Bacon infused Dragon Tails and Snowy Bushes

In my house, we no longer eat asparagus or cauliflower. Why you ask? Well, because I have a 3 year old. 3 year old children don't eat their vegetables, you know. Nope, instead, we eat Dragon Tail and Snowy Bushes. Now, does this 'method' of name changing always work and my daughter eat mound upon mound of mound of green leafies and other similarly icky food? Absolutely not, but she does try them, and sometimes, dare I say, LIKE them. This recipe not only has the catchy names, but they are infused with BACON, and come on, what kid won't eat bacon???
Bacon infused Dragon Tails and Snowy Bushes
1/2 Head of cauliflower
3/4 lb asparagus
1/4 C bacon grease
1/4 C extra virgin olive oil
1 tsp sea salt
2 tsp onion powder

Preheat oven to 400. Remove the woody stem from the asparagus and chop the remaining spear in half.
 Break the cauliflower into florets and chop each in halves.
In a large bowl, melt the bacon grease and combine with olive oil and seasonings. Toss asparagus and cauliflower in oil to coat and transfer to a roasting pan. Place in oven for 10 minutes till cauliflower begins to soften. With tongs, toss mixture around and allow to cook for another 5 minutes.
Turn the broiler to low and allow veggies to brown slightly on the top for about 5 minutes (you will need to watch them and know your own broiler). Enjoy!!
